These seeds are rich in fat and protein, and add these essential nutrients into West African Cuisine.<\/p>\n<p>Nigerian Egusi Soup\u00a0is a soup thickened with ground melon seeds and contains leafy and other vegetables.\u00a0 It is one of the most popular soups prepared by most tribes in Nigeria with considerable variation and often eaten with dishes like Pounded Yams.\u00a0 Prepare it with goat, beef, fish, or shellfish!<\/p>\n<p class=\"wprm-fallback-recipe-summary\">This recipe will show you how to make Nigerian Egusi Soup, a popular West African soup made with melon seeds.<\/p>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<ul>\n<li>1 cup blended onions (about 3- 5 and fresh chilies, to taste)<\/li>\n<li>4 cups egusi (melon seeds, ground or milled)<\/li>\n<li>1\u20442 \u2013 1 cup palm oil<\/li>\n<li>2 teaspoons fresh Une (Iru, locust beans)<\/li>\n<li>Salt (to taste)<\/li>\n<li>Ground crayfish (to taste)<\/li>\n<li>7\u2013 8 cups stock<\/li>\n<li>Cooked Meat &amp; fish (quantity and variety to personal preference)<\/li>\n<li>2 cups cut pumpkin leaves<\/li>\n<li>1 cup waterleaf (cut)<\/li>\n<li>3 tablespoons bitter leaf (washed)<\/li>\n<\/ul>\n<\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<h4>EGUSI PASTE:<\/h4>\n<ol>\n<li>Prepare the egusi paste:<\/li>\n<li>Blend egusi seeds and onion mixture. Set aside.<\/li>\n<\/ol>\n<h4>MAKE THE SOUP:<\/h4>\n<ol>\n<li>In a large pot, heat the palm oil on medium for a minute and then add the Une.<\/li>\n<li>Slowly add the stock and set on low heat to simmer.<\/li>\n<li>Scoop teaspoon size balls of the egusi paste mixture into the stock. Be sure to keep ball shape.<\/li>\n<li>Leave to simmer for 20 \u2013 30 minutes so the balls cook through.<\/li>\n<li>Add the meat and fish and other bits which you\u2019d like to use.<\/li>\n<li>Add cut-up pumpkin leaves.<\/li>\n<li>Add the waterleaf.<\/li>\n<li>Stir and put a lid on the pot and allow cook for 7\u201310 minutes, till the leaves wilt.<\/li>\n<li>Add the bitter leaf.\u00a0 Leave the lid off while the cooking finishes for another 5-10 minutes.<\/li>\n<li>Stir, check seasoning and adjust accordingly.<\/li>\n<\/ol>\n<\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n<p>Now you
